The Feast

Leave the cooking to us! Feast your eyes on the scenery and feast your mouths on our riverside gourmet cooking. Under the guidance of our matriarch, Sue Holladay, we’ve developed mouth-watering menus full of fresh, healthy, and varied meals that can accommodate most everyone’s tastes and dietary needs. We take care of the planning, shopping, packing, and preparation. All you have to do is show up and dig in. Our guides know how to operate a spatula as well as they know how to row a boat. Devour Dutch-oven lasagna, crisp salads, wild salmon, steak, brownies, cakes, and more. Oh, and did we mention that we also do the dishes?

Breakfast

 

You’ll wake first to the sound of the river. Open your eyes to a view of a red-rock sunrise. Next, your nose registers the aroma of fresh-brewed coffee. Every morning, our guides rise early to brew fresh coffee and prepare hot breakfasts such as made-to-order omelets, fresh blueberry pancakes, hash browns, bacon, and sausage. Opt for granola, yogurt, and fresh fruit for something lighter. Hot water for tea, cocoa, or oatmeal round out a great start to the day!

While floating down the river or riding your bike, by mid-morning your appetite may come creeping back! We offer trail mix, snack bars, or an orange or apple to tide you over until lunch. Thirsty? You’re covered there too. Cold, fresh water and canned beverages are always accessible.

In the morning, our menu offers coffee, tea, and hot chocolate with breakfast. During the day we provide fresh, ice-cold water on the boats. We also bring naturally flavored sparkling water and a selection of Coke products, which are limited to one can per person per day. You’re welcome to bring your favorite beverages along, including beer, wine, or cocktail fixings, but please avoid glass bottles. Your guides would be happy to heat up some water for an evening tea or coffee if that is your preference!

Lunch

 

Lunches are served river- or trail-side, deli style. Your guides will set up a buffet beginning with the “instant gratification station” of PB&Js, chips, raisins, nuts, cookies, and fresh fruit, maybe even a famous Green River melon. Main courses include chicken Caesar wraps, deli sandwiches with all the fixin’s such as pickles, avocado, hummus, and hot sauce, and a Mediterranean couscous salad chock-full of fresh veggies. Enjoy your lunch under the shade of a cottonwood tree or standing knee-deep in the river’s refreshing water.

Dinner

 

Your day in the sun winds down with appetizers, served while the guides begin dinner preparations. Veggies, dips, cheese and crackers, or chips and salsa lead into delicious gourmet camp dinners prepared with Dutch ovens or grilled to order. Fresh salads and breads complement the menu. Save room for dessert: pineapple upside-down cake, brownies, or sopaipillas top off a perfect meal. All you have to do is sit back, relax, and eat. And there are always seconds!

Holiday’s standard menu provides diverse, balanced meal options with plenty of fresh food and many ways to meet a variety of dietary needs. We can accommodate the following dietary restrictions as long as we have advance notice: vegan, vegetarian, pescatarian, GF, & non-dairy. We think you’ll be pleasantly surprised by our offerings, but if you have specific concerns, please feel free to call our office with any questions.
