Since 1966, Sue Holladay brings years of river running and cooking experience to our menus that accommodate everyone’s tastes and dietary needs. Just show up for the meals and enjoy your day of adventure. All the planning, packing, shopping and preparation is done for you. Our guides create river recipes into “to die for” meals. Dutch-oven lasagna, salads, fresh salmon or steak, brownies… You will be hungry! Oh yeah, and we do the dishes!

First is the sound of the river. Second your eyes open to the sun-drenched red-rock sunrise. Then your senses take in the aroma of fresh brewed coffee… Every morning, our guides rise early to brew fresh coffee and prepare a hot breakfast such as made-to-order omelets, fresh blueberry pancakes, hash browns, bacon and sausage. There is always a cold option of granola, yogurt and fresh fruit for those who prefer something lighter. Hot water for tea and oatmeal round out a great start to the day!

While floating down the river or riding your bike, by mid morning your appetite may come creeping back! We offer on-the-go trail mix and other snacks to tie you over until lunch. Thirsty? You’re covered there too. Lemonade and fresh water are always available.

Fresh FruitDRINKS

Our menu offers coffee, tea, hot chocolate, juice and fresh cold water and lemonade is always available. Coke products are limited to two cans per person, per day. You can bring your favorite beverage and please avoid glass bottles.

Lunches are served river or trailside, deli style. Your guides will set up a buffet beginning with the “instant gratification station” of PB&J’s, chips, raisins, nuts, cookies and fresh fruit. Lunches range from chicken Caesar wraps, deli sandwiches or wraps with all the extras like pickles, avocado, hummus & hot sauce to pasta salads chocked full of fresh veggies. Enjoy your lunch under the shade of a cottonwood tree exchanging stories of the day so far…

Cataract-June 2004DINNER

Your day in the sun winds down with freshly prepared appetizers, which are served while the guides begin dinner preparations. Veggies, fresh cheeses, chips and salsa lead into delicious gourmet camp dinners prepared with the famous Dutch ovens or grilled to order. Fresh salads and breads compliment the menu and our pineapple upside down cake, brownies or sopapillas will top off a perfect meal. All you have to do is sit back, relax and eat… and there’s always seconds!

Have a hankering for a beer or glass of wine? BYOB is the rule, and we can keep everything cool for you!

Our menu does address special dietary needs. We can accommodate food allergies or dietary needs with advance notice and our meals can be tailored for vegetarians. Just let us know when you complete your guest data information form if you are vegetarian or have any special nutritional needs.

“It’s beyond me how we ate so well. Fresh is the key word for the food on a Holiday river trip. Never have I had so much delicious fruit! Even my 8-year-old daughter cleaned her plate.”
